6 large egg whites.
4 large egg yolks.
½ cup of milk.
1 ¼ cup of sugar.
Powdered sugar Instructions for Chocolate Souffle:Preheat oven to 350°F (175°C).
Butter eight 2/3 cup souffle dishes.
Sprinkle with sugar; tap out excess.
Bring milk and 1 cup of sugar to simmer in a large saucepan, stirring occasionally until the sugar has dissolved.
Reduce heat to low.
Add the chocolate; then stir until smooth.
Pour into a large bowl and allow to cool for 10 minutes.
Beat the egg whites in a separate large bowl to soft peaks.
Slowly add remaining ¼ cup of sugar and beat until stiff but not dry.
Whisk the egg yolks into the chocolate mixture.
Whisk ¼ of the egg whites into the chocolate mixture to lighten.
Fold in remaining egg whites.
Divide the mixture among prepared dishes.
Bake until souffles puff (about 15 minutes).
Sift powdered sugar over souffles.
